Whatever is on the grinder that morning — weighed, ground and poured at the bar while you wait. It takes four minutes. It is worth four minutes.
Butter croissants, morning buns, and a galette that changes with whatever the market sends over. We bake once a day.
When it's gone it's gone — which, most days, is somewhere around noon.
